Our recipe requires reducing 100 liters of fresh local milk down to just 30 liters. During this multi-hour reduction process, the proteins and sugars in the milk undergo the Maillard reaction. This reaction is what gives our Coolrouni kulfi its naturally golden color and deep, nutty flavor profile.

By boiling the milk slowly, we ensure that the lactose breaks down into caramelized notes.
